I’ve only become a fan of tacos in the past year and prefer fish over chicken or beef. I’ve tried this recipe with cod. Crab would be another good choice. The list of ingredients seems long but it’s quick to prepare and serve. I usually make guacamole with diced tomato but because this recipe includes fresh salsa you can leave out the tomato.

recipe:

1. corn: preheat oven to 350 degrees. roast corn with husks for 30 min.
2. cabbage: combine cabbage, salt, pepper, minced jalapeno, mayo, sour cream, 1 tbsp lime juice and set aside
3. salsa: combine tomato, chives, red onion, salt, pepper, 1 tbsp lime juice and set aside
4. guacamole: combine garlic, cumin, salt, pepper, avocado, 1 tbsp lime juice and set aside
5. tortilla: heat each tortilla over high heat in cast iron skillet for 1-2 minutes each
6. fish: salt, pepper, and flour cod. sear in non-stick skillet with remaining jalapeno until fish is opaque. discard jalapeno.

Serve corn with butter and assemble tacos.

ingredients: (serves 2)

3/4 lb cod fish cut into 2-3″ long pieces, 1/2″ thick
6 small corn tortillas
4oz thinly shredded red cabbage
1 scallion
1 tsp mayo
1 tsp sour cream
1 jalapeno pepper, 1/2 minced and 1/2 cut into thin strips
1 large tomato or 1/2 pkg cherry tomato diced
1 tbsp chives
1 tbsp red onion
3 tbsp lime juice
2 ears of corn
2 tbsp butter
2 tbsp flour
2 tbsp olive or canola oil
2 avocados diced and mashed or lightly pulsed in blender
2 cloves minced garlic
pinch cumin
salt
pepper

If you know how to work the dough (I’m still learning), pizzas are great for a lazy Sunday.
I made this today with a spinach salad.

Basic dough recipe for 2-3 people adapted from Everyday Food.

3/4 cup warm water
1 packet (1/4 ounce) active yeast
2 cups flour
2 tbsp olive oil, plus more for brushing
1 tsp salt

Add yeast to water. After 5 minutes, add olive oil, salt, flour to yeast mixture.
Transfer to oiled bowl and cover.

1 hour later, knead gently 1-2 times with a light dusting of flour.
Preheat oven to 500 degrees with inverted or rimless baking sheet.

Stretch and shape dough. Transfer to hot baking sheet. Brush with more olive oil.
Top with San Marzano tomato. Buy whole tomato in can, then crush wih fork/seive and strain juice.
Add 3-4 pinches of salt and oregano.

Return baking sheet to oven, on lower rack, for 15-20 min (or until brown) depending on thickness of crust.

Top with diced or shredded mozzarella, basil, salt and pepper.
Return to oven for another 10 minutes.

- 1/2 can goya cannellini or white great northern beans
- pinch salt & pepper
- 1/2 tsp lemon juice
- 3 tsp your favorite extra virgin olive oil
- 2 tsp o&co basil olive oil or fresh chopped basil and olive oil pulsed in food processor
- 4 roasted garlic cloves
- 1/2 french baguette

recipe
- slice off top of garlic head, add 1/2 tsp olive oil, wrap in foil and roast for 1 hr at 400 deg
- rinse beans
- when garlic has cooled, squeeze cloves into food processor with beans, salt, lemon juice
- pulse ingredients, adding oil as you go to get desired consistency
- plate and add basil oil and pepper
- serve with slices of toasted baguette

variations
- top with thinly sliced red onion, scallion, or diced cherry tomato
- instead of baguette try pumpernickel or whole grain bread with raisin

We found pretty peaches, blueberries, corn, heirloom tomatoes, green beans
and beets at ‘The Little Farmstand’ at Spring Close Farms in East Hampton.

I guess a farmer’s patience runs out once the crop is harvested. A sign behind the counter read
“Unattended children will be given espresso and a puppy”.

Close by is the EECO stand (renting garden patches to the community) selling avocados for $4.50 a piece (WHAT?).
